I just got given 5 hours notice to make a cake for a friend for her best friends 21st. She didnt want anything major just a choc cake with irish creme filling and little miss sunshine...
Easy i thought even tho it would be a lil rushed!

Lucky last night i went out to get a cake mixer! yay me....
Anyways went and got a 10kg bag of muscake mix today. Got it home and the flatmate showed me that it expires in 6 days... Oh well i thought it should last longer than that....

Mixed it all up EXACTLY to how the bag said. 10 minutes on medium. Put it in the oven in 2 pans went off and times for 30 mins (said 40-50 min at 170deg cel) came back and the oven is smoking! The edges are burnt!!! I didnt think the oven was that high! So now im thinking our ovens pretty buggered (to add to that our landlord just told us our rent goes up in 60 days by 40 a week!!!!!)!!!!!!!
So pulled then out. One was REALLY high in the middle and the other one was really high on one side!
So i decided to squish down the bigger one to make it even after a few mins of it being out... so i did that went away for 10 mins come back and it had sunk!
Decided to make a sponge cake as well. That sunk in the middle too!!!!! I then thought oh im using a new pan.... Its one of those flimsy ones. Dont know if that made a difference.

Anyways. Went to roll out the fondant and it was really sticky!!!! The colour wouldnt take and then it all of a suddon went really dry!!!! Tried to place it on to the cake and it tore everywhere!!!! argh!!!!!!!!

My friend turned up 30 mins early to pick it up and i was rushing around trying to finish it and the house was a bomb!!!! (we had a party here last night and drank WAY too much!!!!!)

Ended up telling her i was really sorry and that i wouldnt charge her for it (was only going to get about $30 off her anyways)

My first disaster with EVERYTHING!!!!!!!

so now im sitting here wondering what went wrong!!!!

Heres a pic of the end result

I don't know what kind of mix you were using, because I have never heard of it...but 10 minutes sounds like WAY too long to mix it. I am guessing, and only guessing mind you that you beat too much air into the cake. Then when it cooled down that is what caused the cake to go flat. I would say not to mix your cake for more than 2 minutes and then let it rest for a minute or two. I also will beat my pans to get rid of the air after I put the mix in it. (I pound them on the counter a time or two...It keeps them under submission LOL.)

Mud cake reacts badly to over mixing!!! ten mins sounds way too long!
I usually blend on low for about 2 mins, then on med for another 2 mins add choc and blend for a about a min.

Your cake did turn out very nice, considering the problems you had! I have to agree....10 minutes sounds WAY too long to beat any cake mix. I wonder if that's a typo on the bag? Might be worth a call to them if there's an 800# on the side of the bag?
