I'm a newbie and want to keep practicing. I haven't made a cake yet- but plan to very soon. So far I've made cookies a few times and one batch of cupcakes w/ MMF roses on top. What techniques would you suggest on my first cake to get practice? I'm not sure what to try yet- there are too many options? esp. the icing vs. MMF ? Any tips would be great!

I think you should start with the basics. Buttercream icing, borders and roses. If you can't take a course...at least get a beginners book and or video. You don't have to make a cake to practice borders and flowers. Re-use your icing for practice!

Well I'd pobably start with something simple...It was overwhelming to me when I first started the wilton 1 course, the baking, making the icing, coloring the icing, decorating, THE CLEANING! But I came to love it. (in fact I am seriously addicted now) Anyway I think just a basic 8 inch cake with buttercream icing would probably be your best bet. Do you have any books? Practice some of the basic techniques, stars, dots, shell border etc. Good luck and post your pics!

I would try out BC first and work on the different techniques and take it from there. Then try it with fondant accents and then try covering the whole cake (3 different cakes). Post everything so we can see. Have fun!!!!!!

I would make a cake, flip it over so you're decorating the flat 'bottom' 'crumb coat' it (using a knife spread butter cream on the outside of the cake to stick forndant to it) And cover it in fondant.

To practise you could decorate cookies with coloured royal icing and practice piping etc on them so that when you come to cakes you've got some experience.

Get yourself a good simple book with step by step instructions. I can't recomment one I'm afraid as my first was Colette Peters which doesn't have simple instructions. Actually I've thought of one!
