White Icing.......

Okay, so I mainly use Buttercream Dream on my cakes, but can't seem to get a pure white color. I've tried the violet trick and also adding the brite white coloring to it. Am I doing something wrong?

Should I try a different recipe? I actually tried the High Humidity Buttercream from the recipe section, but didn't care for the taste too much. I guess b/c it was an all crisco recipe.

Any suggestions? Thanks! thumbs_up.gif

No you are not doing anything wrong, LOL. If you are using real butter and real vanilla extract, your icing will not be pure white - the butter is yellow and the extract is brown - there is no way that's going to stay pure white.

You can get a pure white icing by using only shortening and imitation vanilla extract, but in my opinion you compromise taste that way. Others disagree so it's really a matter of personal preference.

I have read that some health food stores carry butter that is white, although I have not looked for it myself.

Ok, My first suggestion is to play with the adding violet again, see if that works for you. I'm loving it. I save so much money on vanilla using the cheap stuff and adding the tiniest bit of violet.

Another option if you like the taste of the buttercream dream is to use sub the butter for more shortening and then add clear butter flavoring. THis way you will still have that buttery vanilla flavor but it's perfectly white because you used all crisco.
