I have started getting orders icon_lol.gif I am very exiced!!!!! But since I am new at this and very green. My question is should I charge extra for filling (which I am sure I should) and how much? Is .50 per serving too much to ask, and if it is what is resonable to charge? icon_confused.gif

I only charge extra if it is a speciality filling. I have a chocolate-strawberry ganache, and a toasted hazelnut-brandy filling. Those I charge extra, but only by cost of ingredients x3, not per serving. I have not switched my pricing over to per serving yet.

I charge extra for fillings cause I have to send for them. I usually charge $5 extra for a sheet, but when it is a wedding cake, the price goes up .50 per slice.

I don't charge extra for filling IF the filling is the same thing the cake is being iced in. Otherwise, I have a chart of fillings that are broken down according to cost and complexity to produce. I charge 25 cents, 50 cents, 75 cents, and $1.00 per serving for fillings.

I dont' charge extra for fillings. I tell brides is "If my supplier carries it, then you can have it."

It's part of our "We keep it simple for you" philosophy.

I have a price grid with (2) separate prices for each sized cake. One price is 2 layer with filling and one price is single layer, no filling. I charge extra if someone wants fresh fruit filling - and that would be market price.

I price them with filling, then if they don't want it I can pocket the price of filling (which really isn't that much)
