I am making a sheet cake with the basic recipe of cake mix, pudding, extra egg. What if I don't have the extra egg?? Will it really make a difference with a sheet cake? I really don't want to go to the store for 1 egg icon_sad.gif

I'd add a couple of tablespoons of milk to make up the extra liquid.

This is the egg substitute recipe per egg:

1-1/2 T. water
1-1/2 T. oil
1 t. baking powder

or

1t. yeast dissolved in 1/4 c. warm water

I often do not add the extra egg, I find it makes my cakes too dense. It will be fine without the egg!

I add a heaping tablespoon of mayonnaise. It makes up for the missing egg and add moistness. Be sure to use regular mayo, not salad dressing (Miracle Whip)!! I learned this trick from my Dad icon_rolleyes.gif , he was a great cook and a creative baker.

I've come up short one egg before and just left it out...cake was fine!

A tablespoon of meringue powder would work too.
