I delivered this yesterday in 100 degree heat, and it would not have lasted another minute in the car! The strawberries were dipped in white chocolate in the a.m., and after the 30 minutes in the car, they didn't look their best, but the caterer ate one and said they were "fri---g amazing"...so I guess that's good...The satellite cake was white cake with lemon and IMBC, the tiers were different flavors of cheesecakes iced with white chocolate cream cheese frosting.

The ribbon was sheer (and WIRED ), but it's what she provided, and I love the way it looked.

I wasn't sure about putting fresh roses on top, and I'm glad I went without top borders, but I really like the way they looked finished.

Also learned that strawberries do not fit on a 1" plate ledge (the top one)! I glued them on with royal and told the caterer to not let anyone NEAR the table. I bumped the table once, and one fell off and landed right on the cake below... So I turned that cake around, switched the ribbon around, and ta-dah, no dinger.

Hopefully they held up through the sit-down dinner and the party didn't start the whole dance-the-night-away thing before they were cut...

The white chocolate cream cheese frosting is just cream cheese beaten, then add melted (cooled) white chocolate and some butter and lemon juice. It tastes almost just like "no bake" cheesecake, so it's perfect to ice them with...!

My 7-year-old was with me, and she kept saying, "This is so not fair! We're not invited..." She wanted a piece too...

That is a gorgeous cake! I would not have thought to make one like that. The green on the strawberries adds just the right amount of color with the red accents (strawberries,roses, ribbon)

I am hungry for a piece of cheesecake now... do you ship?
