Hi I am in course 2 of the Wilton counses and we are making our final cake with the royal icing flowers. The cake is decorated with buttercream icing and I am going to put a strawberry filling inside it. The problem is that I will not be eating the cake right away and I would like to freeze it.
Questions....
1. Is it okay to freeze the cake with the strawberry filling, will it taste okay when I am ready to eat it?
2. I will be putting the flowers and leaves on in class and it is my understanding that we are not able to freeze the royal icing so do I remove the flowers and leaves before I am ready to freeze it?

The strawberry filling should be fine, depending on what you use for filling. Fresh berries don't freeze that well, but jam or jam mixed with icing, or the commercial filling all freeze great.
Yes, you probably should remove the royal decorations to avoid having them 'melt'. Just remove any icing that may be stuck to the flowers and put them in a dry spot.
