I posted this in disasters also but no replies so I thought I'd try here...my whipped cream is breaking down (almost melting) as I apply it to the cake I'm working on. The cake is frozen and it's all of 50 here today so I'm at a loss. The recipe calls for cream of coconut instead of PS but I've used it before with no problems. HELP!!!

Sorry I can't help. I have never heard of that combination for whipped cream icing.

you might want to try adding a stabilizer. You can use gelatin. I like adding a little instant pudding. White chocolate is my favorite.

Is it overwhipped? You can usually save it by adding more cream and stirring gently.
