I'm going to make 9" version of the Gilded Mocha Cake. I won't be decorating with the chocolate covered coffee beans or the gold foil.

Should I / can I blow a bit of gold Sparkle Dust on the top of the flooded ganache?

BTW, it's for my Grandma's 84th Birthday tomorrow.

I am not familiar with the cake, but I would test the dust on a dab of ganache first to see if it will sparkle once it is on the wet surface.

I don't know the cake either but I know that sparkles or gold or something like that don't really work on wet surfaces. If the ganache is cooled you could try a bit on it and see how you like it.
