Allergic To Icing-Help.

I reciently found out that I am allergic to corn. Powdered sugar has corn starch in it, so that is a BIG problem. Even if I don't eat the icing, I get hives just from contact with it. I need a GOOD icing recipe that is shelf stable that doesn't have powdered sugar or corn starch in it. I tried an IMBC recipe today and it didn't come out right...it was too soft. I even let it sit for a while and it was still soft. Plus I wasn't crazy about the taste. AM I going to have to master the IMBC or is there other options? Please HELP!!!!

Buy pure icing sugar that has no corn starch added. It maybe difficult to find and it may also be more expensive.

The problem with confectionery sugar is that in the summer months companies put cornstarch in the sugar without us knowing. They do this to compensate for humidity.
I feel so bad for you Sharon I will keep my ears out to see if we can come up with a solution for you.

i found something here, hope it helps. basically you grind up your own powdered sugar, but use potato starch instead of corn.

Can you use latex gloves when you decorate?

I can and have used latex gloes but I think I need to find those food grade type that let your hand breath. In my classes, I have over 2 hours with my students and I have no choice, I have to touch their icing constantly. Having the gloves on through the whole class is almost as bad as dealing with the hives at the end of the night...I get so hot from my hands sweatint, I end up getting a major headache. For at home, the gloves do work great though becasue I don't havev to do anything straight like that. I will check out the other site though. Its got corn free baking. Sounds good to me. Thanks.
