9 X 13 With Cake Mix

Help! I just made a 9 x 13 cake using a cake mix and it came out pretty thin. (Less than 2 inches) When you make a 9 x 13 with a mix do you add more than 1 mix? How much batter do you use? Luckily this is just a practice cake! Thanks for the help!

I usually add 1T of meringue powder if I'm doing 9x13 before I mix it. It makes a world of difference. I usually torte it once also.

When I bake a 9x13, I use one cake mix. I usually turns out at a normal height. I don't know what happened. Maybe a bad mix????

i use one mix and add the extender recipe that you can find on this site...i think it's 1 cup of flour, 3/4c sugar, 1 tsp b.p., 2/3 water and 1/2c oil...that's off the top of my head, so i would double check but that usually fills up my pan....

about the meringue...i hear it makes the cake rise more...maybe i'll try it

Accoding to Wiltons chart for a 9 x 13 you need 7 cups of batter. The DH mixes I use only yield 5 1/2-6 cups with pudding and an egg added. So I would either make another mix or use the extender recipe on the site.

when I do these size cakes I do the following and it works out every time.

1 cake mix DH
1 stick butter
1 tsp vanilla
1 cup all purpose flour
4 eggs
1/2 c sugar
1 tsp baking powder
1 1/2 c of milk

I beat all ingredients except milk first once incorporated I add the milk and bake for 35-40 minutes.

Definately consider using an extender recipe. Not only do they increase the amount of your batter, but it can also help make you cakes taste moister and sometimes less "cake mix" tasting. There are 3 good extender recipes on this site: Cake Mix Extender, Enhanced Cake Mix Extender, and Super Enhnaced Cake Mix Extender. Try one and your cakes should come out taller and taste better.

Also, you might want to consider baking your cakes at 325 degrees and use the bake even strips on your pan. This will help promote even baking and will help keep you from having a large hump in the middle of your cake.

I always use 1 1/2 mixes for a 9 x 13 pan. Works great for me! icon_smile.gif

You need more than one cake mix. About one and a half cake mixes. The pan should be about half full or 2/3rds full. This should give you a nice full cake. You can use the rest of the batter to make some cupcakes.

I've never had any luck with the extender recipe. I always use two mixes and level off the top (use the rest for cake balls) and this makes for a very full 1/4 sheet that has plenty of room for a filling. Best of luck!

Thanks for all the help! I think I'm just going to use 1 1/2 mixes next time. I bought a bunch of mixes when they were buy one get one free.

One and a half boxes of cake mix along with Bake Even strips will give you the perfect height. No need to trim ever.
