I am looking at getting some ideas for a filling for a key lime cake. My sister is having her bridal shower and she wanted SUMMER SUMMER SUMMER! So, I told her I would do a Key Lime Cake. The filling I was thinking was a white chocolate mousse with graham cracker crumbs in it. Tell me, what do you think? Also, can you think of anything lighter than white chocolate mousse that would be a good filling. Thank you everyone!

Oh, my gosh, that sounds SOOOOOO good! I LOVE the idea of the graham cracker crumbs. A local ice cream shop here makes key lime ice cream with chunks of graham cracker crust in it - it's incredible. Instead of the white chocolate mousse, you could use a fluffy buttercream like the Whimsical Bakehouse's House BC, but the white choc mousse sounds delish. Whatever you do, could you send me a slice?

My wedding cake was Key Lime and she used buttercream flavored with key lime juice, but your idea sounds great!!
