Has anyone heard or tried using coconut flavor in a red velvet recipe?

No, but I do sometimes garnish the outside of the cake by covering it in coconut flakes.

Nope....I use a box red cake mix and use the extender PLUS cocoa and buttermilk....mmmmmmmm.......icon_wink.gif
But I'm sure it'd taste good with coconut too!!!

Well, no I have never heard of doing that...I guess it would be something other than red velvet if you were to try to add coconut to it.

I wouldn't add coconut flavor to the batter or else it wouldn't be red velvet. However, I would add it the filling...how about a coconut cream cheese filling or a coconut caramel filling?

I agree, I wouldn't necessarily alter the cake batter itself. Sugarlove, your filling suggestions sound devine! I think coconut would pair beautifully with a trad'l red velvet cake!
