Mmf, Loved The Taste, But....

OK, made my first batch of MMF and just fell in love with the taste...I had a small wedding cake this past Friday and was going to use it, but it's not bright white. Is the color kinda off white or did I do something wrong?

With the ingredients, you would think it would be bright white.

Plus, when I rolled it out and put it over the cake, it looked like it had little tiny circle tares in it. Maybe these were air bubbles..and if so, how do you get them out...

I do want to practice with what I have made up and really look forward to using it..I just love the smooth look you get with fondant over b/c.

i noticed that my MMF came out off white also. I have heard that the recipe that uses MM fluff is supposed to come out bright white. mayebe you might try that.

but other than that, here is a bump!

I always had those tiny holes, so I stopped using mmf. I think the holes look bad. I didn't always get them, and had been doing nothing different. I started using Michelle Fosters fondant that's posted here and love it. It's so much better than mmf.

I found that when I used "store" brands of marshmallows and powdered sugar, my MMF was off-white. I switched to Jet Puf marshmallows and Domino's sugar and it really made a difference in the whiteness.

Make sure you are not overheating your marshmallows...that will change the color. I melt mine over a double boiler and only until it has melted....then remove it right away. the off color could be caused by carmalization of the sugar. Also be sure and sift your powdered sugar really well. PS clumps can cause small circular tears in the fondant. Hope that helps.

Thank you all for your tips...I didn't use store brand mellows and used the recipe of Rhonda's Ulitmate that has a 5 star rating...I sure I just need to practice with it...this was my very first time making it...

Also, the reciepe shows a 1/2 crisco, but the directions doesn't say when to add it to the ingredients, or is it justed used for greasing down work area and fondant..I wasn't sure, so I added it to my mixture, which could have been a problem too. It was very soft...

But, man it sure does taste good..

I don't add the crisco to the fondant. I used it for greasing the bowl, spoon, and the double layer of plastic wrap that I wrapped it in. I have not had the off white problem. I microwaved the marshmellow for 30 seconds with the water 3 x and stirred well each time.

ya, mmf is off white. i always add some wilton whitener just after i melt the mm's. it makes a huge difference! gets it very nice and bright white.

The recipe for MMF made with marshmallow fluff is bright white and very very easy to make.

I have had that problem also. And the MMF seems to be a little shiny. Is it supose to be? I would like a dull look instead
