Cupcake Question-Need Advice

I have a massive order for 250 cupcakes-can i make them ahead and freeze them? its for june 22. also, if I freeze, not sure if they should be iced first or not; they will be purple and yellow

If they are carefully wrapped, they can be frozen. however, I would not ice them first. Those bright colors are likely to bleed when they thaw.

I have posted the same question earlier this week

Yes you can freeze them but without icing. Once cool you will wrap them in Saran wrap the aluminum foil and place them in a freezer bag you can put 12 regular size in a freezer bag. Just make your icing ahead of time when you take them out You are already prepared.
I have to make 520 cupcakes already started. icon_cry.gif

I've made cupcakes ahead and frozen them in a good airtight container and they were fine. Make sure they have room so they won't get mis-shapen while in the freezer, and the container lays flat so they doon't slide together.

Yep, just what the above ladies said...I also need to make alot more of my cupcakes....I always freeze mine as well in freezer bags. I just did another experiment with icing and freezing colored buttercream on cupcakes and what happens is once they get back to room temp you can see some condensation on them and some did bleed. icon_sad.gif

I also have a cupcake order, not as many yours but good enough for me as I am just getting started. Do you have to use the foil cups or will paper be okay? Each gets wrapped in saran wrap then aluminum foil? Do you keep this on while they are defrosting or pull of when you take them out of the freezer? I have 60 to do for a baby shower and was going to use the pastel papers?

katwomen1up, I have used both paper cups and foil, and they were both fine to freeze. I wrap about 6 flat in saran wrap and then place in a freezer baggie. You could wrap in foil, but both ways work the same. I love using the baggies because you can re-use them. Also, I just pull a bag out at a time and decorate. Then when I'm just about finished with one bag full, I pull out another bag full and lay them on the counter...that way they are not too frozen and not too soft to decorate.... icon_smile.gif

I've only ever used the foil cups (with the paper ones) when I was baking in something other than a muffin pan, as the foil serves to hold the papers up. No need to use both that I can see, certainly not when baking in a muffin pan.

I love freezing cupcakes! They always come out great. I just put mine (undecorated) in a freezer bag and then stack carefully so they don't get misshapen.

When you do defrost, make sure you take the cupcakes out of the bag or at least open the bag. Otherwise the cakes could come out mushy.

What about filled cupcakes? SHould I bake, wrap, freeze, thaw then fill and decorate; or, can I fill them before I freeze them?

Hmmm, I've never tried that before. I'd feel safer filling them after they've defrosted, but maybe it depends on what you're filling with.
