I've heard some people say they do a crumb coat. I've never done it. I try not to "lift" the spatula, I try to slide it off. When I have pulled up on it is when I notice the crumbs. Probably not much help, sorry. Hopefully some of the veteran's can be more help!

Welcome to Cake Central.

The easiest way is to apply a crumb coat. You may need to thin your icing a bit. Spread a thin layer over you cake, gently, creating a smooth surface. Don't worry excessively about a few crumbs. Let the crumb coat set (refrigerating helps).

Once the crumb coat is set, apply your finishing layer of icing.

Thank you all for your help I will be make a cross cake this week and I have always had trouble with the crumbs.
