I'll try and make this short. Basically, new to decorating and have taken the Wilton 1 and Fondant courses. The Wilton 2 class starts next month, but it is on a night that I have another class and can't attend!!!! (In my area the classes alternate each month)
I have been sad and fretting since I can't go, because I am worried I will be losing out on so much!!!
For those that have taken this class...what will I be missing? Should I calm down icon_lol.gif ?
I was revved up about decorating with my other classes and worried that I won't advance if I don't attend....crazy???? Thanks!

If the course is offered in alternating months can't you simply take Wilton 2 in the following month?

Class 2 is lots of flowers.. I would definitely try and take it at a later time.. You won't regret taking Wilton 2.

After course 1, you can take the other courses in any order.

Course 2 is primarily royal icing flowers on a flat flower nail. You learn the chrysanthemum, apple blossom, daisy, violet, primrose, victorian rose, pansy, (that's all I can think of) and you also learn the rope border, and the basketweave. You also learn about colour flow.

Course 3 also has some royal icing flowers, namely the "cupped" flowers that use the lily nail - poinsettias, lilies, morning glories. You also learn fondant techniques and stacked cake construction.

Both are excellent courses, but don't fret if you can't take them in order or you have to wait a bit between them. I had several months between course 1 and course 2, with no problems.

Sign up and take them when you can, you will love them and you will learn great stuff!

I'm sure that others can offer more advise on C2
as I recall, it's primarily RI flowers, and then the basket weave at the end.

I took my courses out of order, 1, 3, 2, 4
my C3 instructor accepted me in class, but I think was a little put off that I hadn't taken C2 already, oh well.
anyway, if you taken C3, you've learned RI with lily nails.
the other RI flowers are wonderful, but I think that it can wait.
also the basket weave is really cool, but I think that it is easy to pick up from photos, and I personally don't use it much.

oh yeah, they do the color flow method. I like color flow, although not everyone does and you can make those sorts of designs with RI or candy melts.

look at the C2 final cakes. (there's one in my photos) the classic cakes (which 99% of people seem to do) encompass all the stuff from class.

I would definitely recommend the class, but if you can't take it right away I wouldn't worry there is plenty to do with fondant and BC!

good luck! and keep decorating!
since I'm done with class I don't have a 'reason' to do many cakes now so I entered the fair (July). now I need to 'practice' icon_lol.gif

Thank you all so much for your info! That helped! I called to question if I could go ahead and take Course 3 and was told no!!! I was told I would have to take 2 before 3 and they did not make exceptions icon_cry.gif ....so odd, but I'm finding out that my Michael's is very odd!
The next 2 course will be in the fall, they will cycle back around, that is why I was fretting.....if it were going to be a month, no biggie. But waiting for several months just seems like forever!
But you guys have made me really want to learn about royal icing!!!
Until I can get into a class...I will just have to study the internet and books! and practice...like you say! thumbs_up.gif

I can't believe they won't let you take course 3 without course 2. That doesn't make any sense to me at all.

I recently became a Wilton instructor, and I can tell you that nowhere in any of my literature, etc. either from Michaels or from Wilton does it state that Course 3 requires Course 2. (Unless I've missed it somewhere - we certainly don't say that!) That must be the decision of the instructor at your Michaels. At my store, you only need Course 1 to take any of the other courses.

If they still say no, then maybe you can spend some time this summer practicing on your own with the royal icing. Instructions for many of the flowers, as well as recipes, can be found in the Wilton yearbooks. BTW, the new one will be out soon! I've seen a sneak preview of the cover - it's got the new castle kit on it. Then, by the time you take the class, you will be able to show off a little.

I'd still recommend the courses. I think it's a shame that they are making you, an enthusiastic student, wait so long. Sheesh!

that is so frustrating! icon_confused.gif

I took mine out of order and I looked at all the literature and it said that you only needed course 1. I took my first two classes though our city's park and recreation department. then I took my second two (3 and 4) at Michaels.

do you have any park and rec department? or a community college that might offer the classes?

the city classes were more expensive than Michaels, but the instructor was better (she offered a lot more advise other than the standard Wilton course book).

good luck!!!

That's ridiculous! There's no reason why you can't take Course 3 before Course 2! Oh, and I took Course 2 ten years after I took Course 1! LOL!

I agree with those who said to practice royal icing....I bet you could learn a lot before you even take the class. Then you'll blow the other students and instructor away!!

I guess just take it when you can! You'll learn lots of flowers! icon_biggrin.gif

please take course 2 b/c royal icing flower make the cake look very professional nd neat compared to the bc flowers. the best part is you can make royal icing flowers in advance for up to six months and u don't have to refridgerate them, so when ever u have to make a cake and don't have time u just throw on the RI flowers u made earlier and u have a beautiful cake icon_smile.gif

Also, don't forget you get to learn the victorian rose (think that's what it's called)...... looks a 100 times better than the regular buttercream roses...... I was really excited that day, because that is when I finally got the hang of the rose. LOL!!!!

If Michaels won't let you take the Course 2 class, then go to Hobby Lobby! thumbs_up.gif

I agree...it is ridiculous, but this is also a Michael's that will not longer accept HL or ACMoore coupons. In the past few months they have changed their attitudes and I guess my class is one of them.
But never fear! I will practice and see what I can do until class time rolls back around!! Yea!!!

I checked out the community college and programs around and no one offers classes, bummer! thumbsdown.gif But today I am going to drive over to the HL (in another town) and see what they have. Thanks again for all the great info! You have me psyched and ready for some RI!
