the day of the reception for a 7 p.m. reception, set up at 5 p.m....

Should I just dip them in the morning and put them right on the cake boards (they go around the base of the cakes, which are cheesecakes) and keep them in the fridge for the rest of that day until set up?

probably for best results, dip them in the morning, but add them to the boards when you deliver them. The cake many need refrigeration, but the berries do not.

Don't refrigerate the berries and the cold will cause them to weep and bleed juice all over the board. HTH!

Just leave the sb's on the wax paper covered tray and leave out. Dipped sb's will sweat/bleed after taken out of the fridge. A room with AC s/b fine. I'd recommend double-dipping them, especially since you're using white choc.
