Royal Icing Roses.....help!

I am trying to make royal icing roses for a cake that I will be doing and they just will not turn out! They start beautifully but after I get the 1st three petals on they start to droop and eventually become a big blob. Any suggestions, I am using the wilton recipe on the back of the merinque powder can. It is fairly thick which should be good for piping roses, I used it to pipe rose buds and they came out perfectly, why not the roses?

It sounds like your icing is too soft. Sift in a bit more powdered sugar and beat it some more.

Test-A single line from the rose tip should stand up on it's own.

Could be two things. First, and probably most likely, you didn't beat your icing long enough. Even though it LOOKS done after five minutes, it still needs another good five or more minutes of beating, especially if it's humid in your area like it is in mine right now!

Second, some grease may have sneaked its way into your bowl/beater/spatula, etc.. If you make another batch of icing, wipe everything down with a little vinegar, then rinse, to eliminate all signs of grease. Also, use new bags or parchment.

In order to get the royal icing to a stiff enough consistency for roses, I have to add up to twice as much PS.

Thanks everyone! I was also wondering if you all had any recipes for royal icing that taste good. The last batch I made tasted horrible, I know it's supposed to be really sweet due to all the sugar, but it just tasted like straight powdered sugar with a weird after taste( I don't know maybe from the merinque powder). Even my 5 year old who likes anything and everything sweet turned her nose up at it! Thanks all for the help! icon_biggrin.gif

I believe that meringue powder adds that "weird taste." Something about citric whatever that they add. I've found the taste fades after a bit.

It tastes really good and the best part is you only have to add a little water.Oops I should have mentioned it is alot cheaper than making it too. It's only $2.99 for a 1lb bag.

I use the CK stuff, too, just love that you only add water to the mix and then let it whip away! What a great product...I would happily pay for shipping on that if I had to!
