Cream of tartar vs. stabilizer powder is there a difference. I took a class Friday night Tres leche cake. While I only speak English the class was in Spanish. Since it was a demo class I thought as long as I took great notes I would be fine.

When the teacher was making the frosting with heavy whipping cream she put in a teaspoon of Stabilizer powder. It cost $5.99 and I have never seen it before and this is the only cake that I will be making that would need this. Since I have the Tartar for other frostings could I use that & save some money? I tried asking the teacher but she didnt speak much English.

For whipping cream, it was probably a gelatin based product. The Wilton books have a recipe for Stabilized Whipped Cream. You could probably find that one in the recipe section here or on Wilton
