Everytime I try to do a search so that I can answer my own questions without having to post everything, I get a wholebunch of misc. topics that have nothing to do with what I'm asking. I wanted to read up on the Viva Method. But when I put this into search it brings up topics that have nothing to do with this. I know you need to let the bc crust before you smooth it out. But how long do you need to wait. I plan on making the cakes and then putting them in the fridge overnight and decorating the next morning. Should I smooth the next morning or do I need to do it sooner than this? Any help would be appreciated.

Well, according to the poster in this thread, you wait about 10-15 min. I've never done it so I can't say for sure!

Just a tip when doing searches. Under the box you put your search words into make sure you click that box that says "use all terms" Then you get a better search. If you don't then when you put in Viva Method you are going to get all the post with method in them too, even if it has nothing to do with viva.

You can also search by topic title only which will narrow the search results.

I've always had to wait longer than 15 minutes for my buttercream to crust so that I can smooth it. I usually refrigerate the cake for a few minutes and that helps..

I think it is best to smooth just after you have let it crust (10-20 minutes depending on your icing) Otherwise it might "crack" when the icing has set up too much. At least I have had this happen to me before.
