Hmm...having it iced presents a problem. If it were un-iced, I would suggest you make a simple syrup and brush the layers with the syrup.
With it iced, I don't have a clue. Do you have time to scrape off the icing, brush it with syrup, and re-ice it?
Simple syrup: 2 cups sugar plus 1 cup water plus 1 tbsp corn syrup. Bring to a boil, remove from heat, and allow to cool (you can hurry this process up by pouring the liquid napalm - I mean sugar - into a glass Pyrex measuring cup and then setting that into a large pan of ice water). Add extracts or flavorings or liquor and brush on the cake.
you could scrape the icing off the top and pour simple sryrup over the top then re-ice the top. sorry thats the best I can do

Oh ~ this is for your party, not a customer! Yes, ice cream is a great choice! Any kind of fruit topping, like macerated strawberries, will be yummy too.
I've seen recipes where you use melted ice cream and mix in liquor or other flavorings too.
I don't do sponge cakes, so I can't help you there, but I'm sure others can!

Sponge cake and Angel food cake are more firm if you will. I've made several, and I can't get mine moist either. I almost alway make them to got with something though and always for my own family. Until I can get it down anyway.
Sponge cake is by nature drier than the typical recipe used for birthday and wedding cakes. Most recipes that call for a sponge cake also have some flavor of syrup that is to be brushed onto the sponge. This adds another dimension of flavor and moisture.
