My friend wants pansies on her wedding cake. I've only made royal icing pancies in the Wilton 2 class, and while they look alright, I don't think they look real enough for a wedding cake. I've never worked with gumpaste before, but I see that Wilton has a gum paste flower kit that includes pansy instructions. Has anyone made these before, and how do they look? I'm trying to decide whether I should try my hand at gum paste pansies, buy silk ones, or just use the real thing?

By the way, anyone else really nervous when making their first wedding cake? icon_smile.gif

TRY. always try. Gumpaste ones aren't hard; they take several steps, but they aren't hard. I don't htink the wilton stuff is all that good though.

The Wilton set is good one for beginners. It has many tools and instructions. If you have time to practice, you should produce perfectly great pansies. The cutters are plastic, so youhave to take care when cutting - rub the cutting edge with shortening and cut completely through the petal to get cleaner edges.

You can brush on plenty of color, and they will last a long time.

However, if you don't have time, silk is perfectly fine and will save you tons of time.
