Storing A Decorated Fondant Cake !!!!

How long does a decorated fondant (Satin Ice) cake with stay fresh? I have to make a 2 tier cake for a Saturday. And because I have a busy week, need to bake and decorate the cake on Thursday. I live in a hot climate, and I add to my cake sugar syrop so it can be moist. Will the cake stay fresh for 2 days!??!?! thanks!!!

Yep, it'll stay fresh....I made a wedding cake, covered in fondant, about 4 days early and it was just fine. I kept it in our garage where it was cold (winter wedding) You'll just need to make room in your fridge icon_wink.gif

If it is a fondant cake, is it advisable to refrigerate it for two days?
I'm interested , also, as I never dare to refrigerate my fondant covered cakes.

I just experimented with a fondant covered football black and white had an order for Saturday but was at the tennis all Friday until the evening so necessary to freeze it. It came out just beautifully just fondant cover it. Cover in Saran and foil carefully all creases will show and pop in the freezer. Take out night before put in a cupbord unwrapped Perfect. I always bake day before and cover in fondant and decorate and deliver the next day. But no time and it was great. Good luck See photos. It will look moist just leave it.

I always refrigerate mine. Well, unless I am taking it somewhere right away.

I'm confused....I thought that fondant doesn't hold up well in the refrigerator.

So it can be refrigerator on the cake?

Satinice fondant can be frozen, so I (me and a few other cc'ers)extrapolated that to mean it can be refrigerated. I tried it on my fondant cake with all the cut out flowers and leaves. I put it in the refrigerator the afternoon I finished it, and took it out next morning to take to work. It did sweat, but I didn't touch it, and took the cake dome off so the moisture could evaporate. It took about an hour, I guess, then was dry to the touch, no problem whatsoever. Plus, if you aren't filling it with stuff that has to be refrigerated, it will be fresh from Thursday to Saturday....did that with my brother's wedding cake, worked like a charm left out at room temp.

how can one tell what types of fondant can be refridgerated? (ie, can homemade fondant be refridgerated or frozen?) I will experiment with my next batch, but if anyone knows, that would be awesome.

I've just finished a groom's cake for a Sat. wedding (very busy also and have to travel with it for 5 hrs. before we reach our desitnation. Leaving on Wed.) In any event, it's fondant covered with BC trims. Presently sitting in the fridge where I plan to keep it until we leave. When we arrive at our desitnation, it will go back in the fridge and then taken out the night before. My fingers are crossed....hope it turns out ok. I used Toba Garrett's fondant...(my absolute fav....) I don't think I'll be disappointed. Every recipe I've used of hers has never let me down. I'll post pics after we return at the end of July. We're off on holidays after the wedding (long overdue holiday).

Karateka says she had it covered by a dome.If the cake is two or three tiers, how you can protect ( or cover) it so it doesn't get damaged in the fridge?

You can freeze and refrigerate Satin Ice (http://www.satinfinefoods.com/about.shtml) but you cannot freeze or refrigerate wilton Fondant (http://www.wilton.com/yearbook/productinfo/rolledfondant.cfm#anc4)

Thought I would just show the difference when you are talking about fondant! icon_biggrin.gif

I make my cakes sometimes weeks ahead of time and freeze them. I Have taken them out a few days ahead of delivery, defrosted, covered with fondant and let sit. Never had any problems.

I use Toba Garrett's recipe & have had no problems with it in the fridge & freezer.

I've always transported my cake tiers separately, in their own box and assembled on site. If you need to store it assembled, I would suggest finding or making a box big enough for the whole thing or having a fridge that will only be holding that cake. good luck.

I have never heard that you could not refrigerate fondant.
I make my own MMF and they get refrigerated if they're not going out right away. I have never had any problems with this, ever.
The baby shower cake I just did not long ago for my best friend was refrigerated for almost two days...her cousin came to the shower and she thought it was a purchased 'gourmet' cake...icon_wink.gif

I make traditional fondant (glycerine, shortening, gelatin, sugar, etc)...anyone tried fridging that? (I don't like MMF)

No, I've never made that. I kinda liked the MMF. But I have never made or tasted the traditional stuff your talkin' about. I have refridgerated satin ice and wilton...both were just fine in the fridge.
