I am making a small cake tonight, that I entend to freeze overnight and carve into a nurses hat tomorrow... Any and all carving tips would be greatly appreciated, as this will be my first time cake carving.

Freezing overnight will make it firm enough to thaw with minimal crumbs. Be sure to use a very sharp serrated knife and gently saw, don't press down to carve. HTH

When I carve cake, I take some of the scraps and mix them with buttercream frosting to make a 'paste' like consistency. Then I use it like a molding material to build up certain areas (like eyebrows on a face, etc). I got the idea from one of Toba Garrett's books, and it works great, plus you are not using all frosting to build areas up, so it tastes better too. icon_smile.gif HTH!

Wow what a great idea momsandraven I can't wait to try it. I have tried both and I think I like it better when the cake is frozen.
