Storing Uniced Cake

Hi all- I'm very new here & have a question I hope you can all help with. I am baking my cakes tonight for Tuesday's dessert. The humidity here is soooooooo ridiculous that I'm afraid to leave it on the counter until tommorrow night. Should I refrigerate? Should I crumb coat before I do? I'd prefer to do all the decorating tommorrow night and Tuesday morning.

I would saran wrap it really well and then refrigerate it until you're ready to decorate. I've never crumb coated anything so I can't recommend that, but a friend of mine is really into crumb coating cakes that she bakes ahead of time.

I am in GA where the humidity is high. You could either wrap and refridge tonight and crumb coat later or do the crumb coat tonight too.
I always crumbcoat because it creates a great seal for the crumbs. My icing goes on much smoother when I do that, too.

Thanks- I'm gonna saran wrap & refrigerate it tonight w/o a crumb coat.

re you putting fondant on it if so do it all now, it is better to let fondant dry out before adding decorations.
