Making A White Almond Sour Cream Cake-Filling Ideas????

My friend wants me to make her son's christening cake for this w/e. I suggested the WASC not because I've made it before icon_confused.gif but because I have heard so many good things about it. Problem is I have NO idea what filling to use. My friend doesn't care, she said she likes chocolate pudding but I don't know if that goes. I suggested chocolate raspberry mousse and she hates raspberry. Any ideas?

Also, what icing do you use for this cake? Thanks so much. I have to start baking now and I am already tired icon_cry.gif

I have not made this cake yet been too busy to experiment anyways I think you can use BC to ice the cake for fillings I think you can use pretty much anything I would prefer a custard but that's just my taste, if not hope someone has better answers for you

So far, I haven't had any 'takers' on the raspberry filling either (but I'm going to make it to try anyway!!) but I've just used buttercream frosting and it's been a hit. I have used the decorator's buttercream and I really like it!

Raspberry is great with the WASC. Strawberry or cherry also go really well. I've done the WASC without adding the almond extract so it's just a vanilla cake and then done the cookies & cream filling. That is terrific too!

I really like preserves. Three layers - 2 with the preserves and the 3rd in the center with buttercream...yummy!

A lemon whipped creme filling would be good too. Get heavy whipping cream and I'm not sure how much you use but you whip it with your mixer and lemon flavored (or any flavor for that matter) instant pudding. It's pretty good too.

I just did a WASC with a fresh strawberry filling for a gentleman's birthday party. It was a large party (150-ish) and there were no complaints, I even received a call afterwards to compliment me on the cake. She said they enjoyed the taste - just the right amount of almond flavour with the strawberries - and they also enjoyed the texture - no crumbling when they served it. I used BC frosting to keep the sweetness down.

I was also thinking of trying the WASC with a fresh blueberry filling next, not sure why but it just sound good to me....

Anyway, you can find a fesh strawberry filling recipe in the recipe section. I'm going to use the same recipe, but with alternate fruits... blueberries, raspberries ... maybe a peach or something ...

If you can will you let us know what you go with and how good it was? I'm [/i]always[i] looking for a good filling!

I've used several different fillings but my favorite has been a strawberry cream cheese filling...and then the Wilton decorators BC to ice it.

I made my nieces wedding cake WASC with raspberry,strawberry and pineapple 4 diffrent layers, no leftovers. Everyone loved it. The icing was BC.

Hi everyone, I ended up using a white chocolate mousse which everyone loved and my friend really liked it because it kept the cake all white and "pure" looking. Next time I will experiment with something else icon_lol.gif

I made the WASC for the Angela's B-day cake in my gallery. I left out the almond extract and used some lemon oil extract I got from Williams & Sonoma instead. I frosted with decorator buttercream flavored with the lemon oil and some citric acid crystals for a bit of tang then covered with MMF also with a tiny bit of the lemon oil and citric acid too. It was wonderful tasting and everyone loved it.
