Hi All,

I have to ice a birthday cake (buttercream n MMF on a butter cake) on Thursday night, pass it to a colleague on Friday for a birthday party which is on Saturday.

Is this possible? Can an iced cake be kept for 2 whole days? Would the buttercream stain or seep through the MMF?

If I can keep it for 2 whole days, do I leave it out or in the fridge?

Please let me know. Thanks.

I have had a cake sit for a few days with no problem at all. I made a graduation cake on Monday and the leftovers are still sitting here with no problem.

I think it would be fine out for 2 days. I have done that lots of time. I have one in the fridge that I made last week for a party that was cancelled until tonite. I hope that one still tastes good. I'm thinking that the frosting seals in the freshness of the cake.

Not a problem at all. In one of my Debbie Brown books she says a cake frosted like that is fine for 2 weeks (although I wouldn't want to try it)! Definitely don't put it in the fridge.

The weather here is so unpredictable. It's really hot on somedays and it's rainy on some. I really do hope everything stays intact just in case the weather is too hot on those couple of days.

I think it would be fine as long as it's not super hot. We are already hitting 100 degrees here in So. Cal. And while we run the air during the day, it's still 80 degrees when we turn it off at night. I wouldn't have a cake sit out for 2 days with it that warm. At least not one I would serve to other people. I think the fridge would mess up your mmf.

Thanks guys for all your advice. I am going to seal the whole box and tell them to keep it in a cool dark room till Saturday evening.
