How And When To You Collect For A Wedding Cake

I was just curious what most of you do as far as payment for your wedding cakes. Do you collect some up front and then the rest the day of the wedding, earlier than that, after the wedding?????
$200 down payment.
Balance is then split in half....
1st half due 21 days prior.
2nd half due day of event.
I take cash, check or credit card.
I require a $50 deposit to hold the date and guarantee current prices. The remaining balance is due 10 days before the wedding (this gives time for the check to clear ... or bounce ). I accept cash or checks.
I require 1/2 down upon booking (non-refundable because I will turn down other bookings for the date) and the remaining 1/2 due 2 weeks before the wedding.

Haven't sold any of these yet. But this is what I will do when I do sell them. May require 2nd half 4 weeks prior as I won't order any supplies until receive payment in full.
I require 1/3 at the time of booking non refundable for any reason the rest must be paid 30 days prior to the wedding or I do not start
I do not even see the family when I deliver the cake so that would not even work. and so what I would leave with the cake... nope I don't start the cake if I have no money.
I require 25% at time of booking, with the balance due IN FULL no later than 2 weeks prior to wedding. I accept cash, checks, credit cards. Most pay way before the deadline.
