Is it o.k. to put sliced strawberries between the layers along with the buttercream? I'm thinking that the juices from the strawberries will start to seap through the icing.

Any suggestions on how to handle this?

I first spread a thin layer of strawberry jam/preserves and then put a dam of thickened buttercream around the inside edge of bottom layer. Press strawberries into jam and then put BC on top and top with cake. Press lightly to seal cake. Let set overnight if possible to allow cake to settle.

Hi: When you torte the layers put a dam of icing around the cake layers which will keep the icing from oozing out and mixing with the icing on the cake. Vicki0052.

She doesn't want strawberry filling or jam. She just wants sliced strawberries between the layers.

i did this once and the cake was fine the first day, then after that (even though I had put a coat of buttercream under the strawberrys) it made the cake a little mushy. You could try putting a thin layer of buttercream on the top and bottom are where the strawberries will be. It tasted great though.

i do a cake with lots of strawberry slices between the layers-- i have a thin layer of vanilla pudding made with heavy cream spread on the layer that goes on top of the strawberries but still... i think its pretty close to the same thing. i don't have a problem with the juices spilling out as long as there's a buttercream dam.

I did mine with strawberry coolwhip and strawberries. Was really yummy.
