Help! Suggestions For Sheet Cake Please!!!

Ok. So I am supposed to do a full sheet cake for a birthday party and I don't do sheet cakes that often. I'm still a little shaky on some things. I'm not sure if I should use 2 11x15 cakes put together or 2 12x18 cakes together. Also, how much batter would I use in 1 pan in order to get at least a full 2" cake. Everytime I make a sheet cake I seem to not put enough batter in it and it doesn't reach the full 2 inches!!! Thank you for your help in advance!!
How much batter to put in your pans is easy:

The above Wilton charts tell you how much batter (2 or 3" deep) by pan size, and how long to bake at what tempearture. There is also a serving guide for either wedding or party size slices.
Your customer might be better served if you knew how many servings were needed, and then decided what the best pan size would be.
What constitutes a half sheet is another matter. If you searched for a half-sheet cake pan - it would come up 12x18:

If you're going to join two sheet cakes together it has been recommended that you use a plywood cakeboard to keep the icing from cracking.
Also, I would highly recommend the WASC cake if you use a doctored mix:

(There are many flavor variations using different extracts, fruit or lemon juice and even liquers - also can be made into chocolate or any flavor of cake mix available.)
The WASC cake yields 14 cups of batter, so it's a big help when making sheet cakes.

I agree with Jan....you need to know how many servings the customer needs first. I use an 11x15 as my 1/2 sheet (after some market research in my area, this is standard for my region). You should be able to find a large cake board for (2) 11x15's....my local cake supply shop has them and they are sturdier than normal cake boards also. I don't know how many servings they need but (2) 11x15's serves 70-80 by my serving standards. I don't rely on anything Wilton when it comes to batter in pans or serving sizes. I base my servings for sheet cakes on 2x2 squares (1-layer high).
Also, assuming you use cake mixes, I use 3 boxes for my 11x15's...now that's not using all of the batter, but I fill it 2/3 full and have to shave off the top slightly (use bake-even strips) and this guarantees me nice, full, 2" high sheet cakes every time! Some folks swear by 2 boxes in an 11x15, but I've tried it and my cake corners never rise to the full 2" height of the pan! So, 3 for me!

P.S. Based on my 2x2 servings, one 12x18 will serve 54, so 100-110 if doubled, depending on how they cut it!
