icon_mad.gif I am so MAD!!!!

Does anybody know why when I make cupcakes that the middle of the cupecake would sink in the middle instead of rising? They taste GREAT, just don't look the prettiest!

Buy an oven thermometer. Our oven was 50 degrees hotter and our cakes/cupcakes always did that too. Now that we know the true temp. of our oven we get perfect baking every time. icon_smile.gif

I've seen them for around $4-$7 at my local discount stores.

Shop around. They can be inexpensive, as a purchase at a Dollar store, to mid-price in Dept. store's, to high dollar in a Culinary store. There's a thermometer out there to fit any budget you need to work with.

I normally cook my cakes and cupcakes at 250 degrees. Once I get a thermometer, and find out what the true temp of my oven is, should I still continue cooking them at a true 250 degrees? usaribbon.gif

I think that 250 is mighty low for a cake - try upping the temp to 325 and see if that doesn't help also.

Yes cupcake sshould be cooked at around 325. I had a problem with cupcakes sinking when using a yellow cake mix made with butter instead of oil and pudding and an extra egg. But I just swirled big buttercream swirls on top and you couldn't tell that anything was wrong with them.
