How long can a fondant covered cake sit out without becoming hard? Or do you keep it covered? Also do you put a cake that will be covered in fondant on a cake board the same size as the cake or larger? I have seen where people are talking about elevating the cake to smooth and cut off the excess fondant. If so, do you then put it onto a larger board?

Depending on the filling, a fondant covered cake can sit out for several hours, even a couple of days in a cool environment. The fondant will not get hard, but the insides can suffer some. A filling like jam, that does not require refrigeration would be OK. The fondant will draw some moisture from the cake, so the fondant won't harden in a few hours.

Most often, the cake sits on a board the same size as the cake, and then is placed on a more decorative board. this is true of non-fondant cakes as well.
