"healthy" Cake Made With Wheat Flour?
Baking By potatocakes Updated 22 Jun 2006 , 3:04am by alimonkey
I have a request from a customer for a healthy cake made with wheat flour. I don't think there are any allergies or medical concerns. I think she is just wanting a cake that's not quite so bad for you! Any help with a recipe? I'd love one that someone's actually tried before so I know that it actually tastes decent, too! Thanks for any help!

I'm assuming you mean whole wheat flour, since most flour is made from wheat.
Here's info from the King Arthur Flour web site about their White Whole Wheat flour. You should be able to use your own recipes with it.
100% White Whole Wheat Flour
Use King Arthur White Whole Wheat Flour in place of traditional whole wheat for lighter color and milder flavor. Or substitute 100% White Whole Wheat Flour for the all-purpose flour in many of your favorite recipes. Start by replacing 1/3 of the all-purpose flour with white whole wheat flour; gradually increase the percentage of whole wheat, till your baked goods' flavor and texture are just the way you like them. We find that in cookies, muffins, pancakes, and quickbreads, using white whole wheat flour in place of the entire amount of all-purpose flour yields a baked treat that's just as tasty as the original, with the benefit of increased fiber, vitamins, and minerals.
