Pastry Chef Interview.....ahh!!

Last week i got a call from a friend of mine that is getting married next summer. To make a long story short, the plantation house she's having her reception at requires you to buy a cake from them. My friend and her mother told the people they would get the groom's cake from them, but they wanted to get the bride's cake from me. The lady pressed them as to why the would really want to order their bride's cake from me. My friends explained that they've had my cakes, they like the taste, and they like my work. Finally the lady asked them if they had any pictures of my cakes. They said no, but they could show her my website. The lady reportedly loved my cakes. Then she told them that her Brazilian pastry chef is leaving the U. S. to go back to Brazil and she's looking for someone to take his place!!! She gave my friends her cell number and told them to have me call her. When I called her she was soo excited that I'd called her. I explained to her that I've only ever had experience with cakes, not other pastrys. She was fine with that and wanted me to come in for an interview!!! So, in about 3 hours, I'll be interviewing with her. I'm nervous, scared, and excited all rolled into one!!!! I just needed to freak out a little, and I knew you all would understand. Thanks!!!

Thank you so much for all of your encouragement. It was a really great interview and a great experience overall. They want to hire me, but as it stands right now, I'm not sure that the hours and demands of the job will work out for the best with our family situation. This is much different than even being offered a job at an upscale bakery. The house is a very popular wedding spot in the middle of Atlanta, so they have many weddings each weekend. Back when the present pastry chef started, his first weekend, there were 12 weddings booked!!!! I would be the only person that did cakes, no one else whatsoever. This means I couldn't get sick or take a trip or anything, I'm it. Now, I promise you I'm not the type of person that just does anything I want and take trips all the time. But my husband and I just booked our first vacation ever for the first week of September, and I would have to cancel. I am beyond honored that they have considered me and wanted to hire me, but I feel that right now, this would be way too much pressure. If anything, this has boosted my confidence to offer the best that I possibly can to my customers. (By the way, I have several weddings of my own already booked that I would have to cancel and I don't want to do that. Such a horrible thing to do to a bride!!!) So thanks for your support! What an honor that she found you! Maybe you can talk the owner into allowing you to be an 'overflow' cake maker or a sub when the full-time one is out. You could have the best of both worlds and not be too swamped icon_razz.gif

that is the hard part-You do not have time to do any thing and a very demanding position. I made a choice to leave my Pastry Chef position because I was working fifteen hour days and never saw my daughter and husband.
Good for you! You should be proud because you took your own priority first! It is like buying a house you know when the time is right!

Congratulations on the offer.

I'm with Dr. Tina. See if they would be interested in using you as an overflow person, maybe tell them you could do some of their stuff, give them a limit.

Well, I called the lady to give her my answer and I did as you suggested, I told her my major draw back to the job was the number of hours. She was disappointed, but said she would call me if she was in a pinch. So, maybe I haven't heard the last of them. icon_smile.gif Thanks so much for the suggestions!

I think you did the right thing. I know I couldn't handle the stress of that job. What a confidence booster!!!
