So I had a customer call, and say she needed a cake right away. So I rushed like crazy and finished her cake in four hours Thursday evening. Butter cream with fondant decorations. Well I called and her husband said ok can we keep it in the fridge? The party isn't until Saturday. I would have never put all of the little fondant creatures on the cake if I knew they weren't coming to pick it up! This is the first time I made them a cake and I am worried that it might get stale by Sat!
I was under the impression that the party was Friday. How do you think it will hold up in the fridge. I left it in there over night with all of the frogs and bugs on it and they seem ok. I'm just a little stressed because this woman and her friends were worried that my cakes might just be pretty and not taste good, so this was the test run. UGH Frustrating!!!!

you really don't want to keep it in the fridge b/c the fondant will hold onto the moisture and get very gooey. It will be fine out for 2 days. If you don't have a caddy loosly cover it it with suran wrap-do not leave in fridge. Also, it could absorb other fridge flavors and make your cake taste really icky.

Uh.....why are YOU storing this cake? I'm pretty darn sure they have a refrigerator and THEY can store it in the 'frig for 3 days. They ordered it. They need to pick it up. They need to store it.
Unless you are a full bakery with a HUGE walk in refrigerator and part of your business is making cakes days in advance for later pick-up...... ![]()

Even though you might just be starting out and want anyone's business, remember that customers that say stuff like that up front are usually problem customers anyway! Do they seriously say that to other bakeries?
Just have confidence in your abilities, you know that your cakes taste good or you wouldn't do them, so don't stress over them.
If they told you they need it urgently and then decide they need it later, the freshness factor is their problem too, not yours.
I'm sure your cake will be fine for 3 days, think about it normally people are still eating leftovers then and they aren't stale either!

I'm glad they came and picked it up. SO I have to ask, how long have you known them and were you at all offended when they mentioned that they were scared your cakes would not taste good? Also I notice you have lost a lot of weight (I am a newbie so still getting to know the CC's) anyways I wanted to say Well Done!
Thanks everyone! They called yesterday, and said that the cake was a hit! They are used to grocery store cakes, so I'm not surprised.
