I'm a newbie so please excuse this question(which I am sure has been asked many times.
I have had trouble finding a cookie icing that I can use (other than royal) which I can freeze. I am very busy at times and hate to wait until the last minute to do them- I never know what will come up. I have a crusting buttercream icing that works for decorating but the recipes I have tried so far for flooding usually get splotchy after a day or two and do the same thing if frozen. I have ten wedding dress and ten wedding tie cookies that have to be done soon and around 100 wedding cake cookies that I would like to make solid white with details if I can find an icing that will work. So far royal just will not dry for me. Live in Louisiana and it is very humid - don't know if that is the problem or not and don't really like the taste of royal either. Any suggestions will be greatly appreciated. I plan to test more icing recipes this weekend.

Don't know of any other icing that you can freeze. However, if you want to use fondant you can :
- bake cookies and freeze them uniced
- cut fondant using the wedding cake cookie cutter
- decorate the fondant in the style you want
- store the decorated fondant in a container

When you need the cookies, defrost them and then brush lightly with corn syrup and place the decorated fondant on the cookie. Leave to dry for a little while and then you can package them.

have used the rolled butter cream icing on cookies. still have some in feezer and take them out as I need them and they taste great. the rolled butter cream can be made and cut out ahead of time and frozen. day of making cookies just pop the shapes onto the hot cookies and wait over night for the butter cream to dry. to freeze cookies, wrap tight and freeze.
hope this helps

Thanks everyone for the ideas! I'll check the recipe section for a fondant recipe and a rolled buttercream and give them a try.
