Okay - I was doubling my recipe for BC - normally calls for 2 TBS meringue powder. Put powder in, continued mixing, then suddenly thought maybe I didn't double it. icon_confused.gif After giving it more thought, added 2 more TBS. Tastes ok and looks ok. If I put too much in, what will happen?

I think it should be just fine...but this will give you a bump so maybe someone will know for sure.

The extra merinue powder will encourage the crusting of the buttercream. It should be no serious problem.

Thanks all - it did seem ok when I used it yesterday (maybe a bit stiff or it could have been my imagination). Anyway, my 6 year old granddaughter wanted to decorate a cake so we used that. It was fun - I think I have more patience as a grandmother than I ever had as a mother - my kids seem to agree!
