For the Easy MMF recipe on this site, can you double the recipe or is it best to just make 2 batches? I'm afraid I might eat as much as what I put on the cake. LOL Just kidding...maybe.

That is a large batch, almost 2 pounds of powdered sugar. You would be better off with making two matches. The trick to this recipe is to be careful not to add all the powdered sugar at once. You may not need all of it. When you can knead it, and it is not sticky, you're done with the sugar.

I would make two separate batches, as it can be very thick and sticky at first. I don't have a KA mixer though, and some people use that to mix their MMF, but it just seems like it would put too much stress on your KA mixer, or your hands, to do a double batch.

Ok, that's what I was figuring on too. Thank you so much!

I think you should make two separate batches cause its better, in my own humble opinion, to work with smaller amounts. I hear you on sampling...I am guilty of that as well. MMMMMMMM.....

I would suggest one batch at a time as well--based on experience. When I have made double batches, they did not come out anywhere near as good as single batches. I do everything by hand and it may take twice as long, but I know it will be good just doing one at a time.
