I am having the worst time with coloring icing. They all turn out to be candy-like, garish kiddie colors. I made a father's day cake tonight and struggled with trying to make a color that didn't look like a circus color.
Does anyone have any tips for making colors that are pretty but don't look like they belong on a clown suit?

patience. start with only a little color (really little - just a bit on the end of a toothpick) and blend it - and know that it will darken or intensify as it sits. if you are really having trouble, blend some a few hours prior to starting to decorate - that way you'll know what the true color will look like.
That's the trick in a nutshell - use teeny tiny amounts of colors, and always err on the side of caution. I usually do 3 to 6 dips of the toothpick using minute amounts when I'm aiming for a pastel shade of color, mixing very well between additions and bearing in mind that the colors will darken as time passes.

I know we need staples like red, yellow, blue, green, but try some others like ivory, delphinium blue(a fave), moss green, and peach.
