Hello Everyone,


Could someone please tell me what's the difference... if there is a difference between sugarpaste, gumpaste and pastillage? Thanks!

Sugarpaste is another term for fondant

gumpaste can be rolled very thin and dries hard for decorations and flowers. It can be blended 50/50 with fondant for figures and structural items that need to dry hard, but you need more time to manipulate the dough.

Pastillage is similar to gumpaste, dries very hard and fast. It is used for some decorations and structural items for strong supports. It is often used for bases of cake sculptures.

Sugarpaste (fondant) and gumpaste are often eaten (except wired flowers). Pastillage will break your teeth.
