Rolled Buttercream - Too Shiny!!

First I would like to thank everyone that helped me with ideas for the arist palette. I decided to go with a rolled buttercream instead of fondant but it came out really greasy/shiny. Is it supposed to be this way?

I made the paint tubes out of fondant but it really tastes too bad to make the whole cake out of it. Would Satin Ice have been better?

I think it is supposed to be shiny. Every time I've seen it on a cake, it has a sheen to it. I prefer MMF (marshmallow fondant). Ever tried that?

Yup, that is one of the characteristics of Rolled BC--sometimes it is not a good thing. I think your cake looks great with the shine, though!

I agree with Lisa - I use mmf and it tastes really good. If you can master rolled bc - you can handel mmf. It's a great cake...very creative!

Your cake is cute!! I have never actually used rolled buttercream, but I did see a demo with it at the Austin cake show recently - and it is shinier than MMF. The demonstrator also say that it doesn't harden as much either, so if you use it for decorations you have to go with a 50-50 mixture with something else, gumtex or gumpaste I think. However, he said that he uses it for all his wedding cakes, so it must hold up pretty good!!

I LOVE Rolled Buttercream. It Tastes like candy corn to me! I think it's 10x better than fondant. I had to use some fondant in it b/c it kept breaking or making little tears.......... but my customers LOVED it! SO much more so than fondant! I don't think I'll use fondant again! I tried MMF, but didn't quite get it to work my first time out. It was too dry and hard. I think I may stick w/ rolled buttercream - it may be shiny, but the taste is SOOO good!

I think your cake looks great! I am from the Louisville area also. I'm getting ready to try the rolled buttercream and the MMF to see which I like best.

I have never used rolled buttercream. What is the consistency of it after it is made? Also, do you actually roll it out like fondant?

Yup, roll out like fondant, though I find it much softer and stretchier than fondant, and of course very shiny. It is a good alternative, though, for those who don't like any kind of fondant--even the yummy MMF.

Sorry, one more question. Can you paint on rolled bc - luster and petal dust - like on fondant?

Hmmm. Don't se why you coldn't. I do it with regular BC all the time. I don't do Rolled BC very often, so have never had an opportunity to try. Give it shot!

Thanks for your help missyek. By the way I have 2 of your pictures in my saved pic's. My niece was over this weekend and fell in love with your pillow and crown cake. She asked in her sweetest voice, "Aunt Stacey, do you love me enough to make me this cake for my birthday?"

Your cake is perfect - I'm going to try to give her something close. I wanted to thank you in advance for the inspiration. I have dying to do a pillow cake since I got the new Collette Peters book. I think I'll be ok there - but your crown is awsome!!!! I'd be happy to just come close.

you can reduce the shine by dusting it . . . I took a quick course on it and the instructor used a powder puff (one you would get with body powder, but never used wiht powder) and repeatedly dusts cornstarch/powdered sugar mixture to reduce the shine.

and he uses rolled buttercream for decorations too, but he just worked in a lot more powdered sugar. he was able to mold it like he did fondant.

Thank you for the kind words - I did not realize that it was supposed to be shiny - I thought I did smoething worng and I kept adding conf. sugar!

I have never tried MMF - little afraid - is it easy to work with?

Oh yeah! And so easy to make! Just MM, water and Conf. sugar (and flavor if you want). It is not as stretchy as rolled BC, so I find it a bit easier to put on a cake.

Rolled buttercream is yummy but I had the same shiny/greasy problems as you. I ended up mixing it 1/2 and 1/2 with fondant. Try the Satin ice or MMF. You still get the good taste but it will be more manageable.
