What kind of filling goes best with a Coconut cake?

The last one I did, I used a butter-based buttercream and added coconut (put the coconut through a food processor so it is fairly fine)

You can also use vanilla custard, lemon curd, or even lime curd.

I think strawberries would also taste great.

It would depend on several 'wilting' factors.

The buttercream with coconut sounds great! I will have to try the vanilla and lemon fillings too.

I make either a coconut custard or a caramel filling. You can do a dark chocolate ganache too and have mounds bar cake..mmmmm.

These all sound really good.

I tried the lemon curd from a wilton book and it was great! A little sweet so I won't put as much sugar as it calls for next time.
