Hi!! Here is the pic of my Son's orchestra cake that I finished today, they all loved it. My son made the bass out of fondant. Here is my first attempt with roses, I made them out of royal icing. All in all I am happy with the cake. School colors are purple and gold, so I dyed two of the cake layers purple and the middle was the butter recipe, the teacher LOVED it when she cut into it.

I love the way you did the music notes, wish my hands were that steady.
What recipe did you use for the royal iceing? The one time I made it it was so thick it would barely pipe out of a #12 tip!

I am in the Wilton I class right now, and I used their class recipe for the royal icing.

is it the one on the wilton website? Thats the one I used, hmm, wonder what in the world I did wrong. How do you make royal iceing thiner without ruining it? What was the consistancy of yours to do the roses in, they look wonderful! I cant believe your still in a class, it looks so profesional!

mine always comes out too thick too. I think my kitchen is a moisture sucker! I have to add more water to make it workable. Just keep adding a drip or two at a time until it is a usable consistency. Many times I have to add up to 2 to3 tablespoons more water if not more.

I went to my first class last thursday and the teacher demo the roses, so I was really excited to go home and do them, so I used the class buttercream recipe and I was able to do them, but I didnt like the way they looked, so the teacher said that royal icing is thicker than buttercream so I tried that and she was right, the petals looked better, but I am going to have to practice with the buttercream, as my son did NOT like the HARD roses! LOL

The first time I made royal icing, I did not use the mixer long enough and it was really thick, this time I did the mixer for the full 10 minutes and it was fine

I guess I didnt beat it long enugh. My poor little hand heald mixer started to smell really bad though. Im going to have to save my money and get a good one, maby even a stand mixer icon_biggrin.gif
