Thank you all for your help this week. What alot of work a wedding cake is! I'm so glad it's done! I'm not sure i want to do another any time soon... I had a heck of a time w/ the fondant. I used Pettinice for the first time and had a problem with it cracking even though i used Crisco and for the life of me couldn't smooth the wrinkles out. I think I'll stick to SatinIce. I didn't order enough sleeve filling so I had to make choc. ganache to whip last night. This threw off my timing and the cakes didn't come out of the freezer 'til this morning. Then I had condensation issues. However, I used the Wilton plastic dowels on a suggestion here and they worked great!! DH came in at delivery time and commented on the cracking (that's when i knew it was bad! LOL) But we got to the wedding and strategically placed shells & pearls and he was impressed. I told him what makes a good decorator is how well you can hide the flaws LOL
Whether it's true or not! Luckily DH came with me b/c the cake table was set up on the lawn!!
I had brought my level so DH was able to shim the table so it wasn't leaning backwards. Anyway, thanks to all again for your help! Now to clean the kitchen - it looks like a bomb went off!

I know that kitchen thing. God love my husband. He is more of a housecleaner than I am. We have been married 15 yrs. and the last 8 yrs, I don't think my kitchen has been without a light dusting of powdered sugar
. He just takes it in stride and I clean everything up when I get all my cakes delivered.
