It Was A Disaster! Any Help??

I got my carrot cake out of the oven and all was well. I let it cool in the pan for 10 min. When I tried to take it out of the pan to finish cooling on rack only the top part of the cake came out and the bottom was still stuck on the pan. I greased and floured the pan and now its ruined! icon_cry.gif I have another one in the over. How do I get the cake out of the pan with out it sticking to the bottom? Was it still too hot?? I'm a newbie at this and I'm not sure where I went wrong.

I've never left my cakes in the pans for 10 minutes after taking them out of the oven. I only leave them in the pans for the length of time it takes me to pick up the cooling rack, put it on top of the cake and then flip it over. If I had to venture a guess it would have to be that your pans weren't prepared properly. I use the commercial pan grease, but before I found that I would use the grease/flour method. Years ago I would also trace waxed paper on the bottom of the pans then cut it out and place it in the greased/floured pan. I never had a cake stick using that method. You could also try parchment paper in the bottom - it works great, too.

Sorry that happend to you....it's happend to me yeasrs ago and that's when I started to use parchment paper! I love that stuff. I still grease and flour my pans then I use parchment on the bottoms of the pans.

I wait 10 minutes or so to take the cake out and when I flip it over.....plop...it comes right out. Get some parchment...you'll be happy you did icon_cool.gif

Yep, its all about the parchment in the bottom. Even if you forget to grease the rest entirely, you can always use a spatula on the sides and the paper will make the bottom come out clean. I spray my pans with pam before I put the paper in.

My friend gave me a homemade recipe for cake release. Use equal parts flour, shortening and veg oil. It worked like a charm. Hope this helps!

well for now not sure to tell you but for next time use the parchment paper!!! it is a great thing!!! all of the above suggestions are fool proof!!!!!! good luck!!!!!!!!

Before I wrote my post I put my second cake in and yet again it happend! I just sent my husband to the store for more ingrediants. I will put parchment in the bottom this time. Thanks for all your help. Third time is a charm (hopefully) icon_lol.gif
