Hi I have this question ..I have read some books,internet sites and
which is the difference between:

*fondanat icing
* fondant rolling
* sugar paste

Fondant Icing is a liquid, its what you see covering little European Petit Fours.

Rolled Fondant is the soft play dough like stuff you see on all the wedding cakes

and sugar paste...not to sure exactly but I've heard of some people calling gumpaste that when they explain things to clients so they dont get confused and ask tons more questions.

Sugar paste is also rolled fondant. Gumpaste dries quickly and hard, to make flowers and long lasting decorations. Although it is edible, it general is not. Many of the flowers are constructed with wires.

"fondant" is generally the term for rolled fondant

Poured fondant is the melted or liquid version, often used on petit fours or cookies.
