I have found that putting crisco on my hands and my work surface makes the mmf nice and pliable. Are you using cornstarch or p. sugar on your hands and surface by any chance? You might be able to fix any cracks by putting a little shortning on your finger and rubbing over the cracks.HTH.

Before you throw it out, try kneading some crisco into it and see if it helps.

When you make the fondant, do not add all the powdered sugar. In most cases, you will not need all of it. Once you have added too much, it is difficult to rescue. If you really can't get it softer, save it to melt for poured fondant. Wrap it very well, and freeze it. When you need some poured fondant, thaw it, microwave it, add a bit of water to get a pourable liquid.

One the MM are melted, only add up to about 3/4 of the sugar for your batch. stir it as much as you can, then dump it all onto a lightly greased work surface. Using care-it might be hot- start to knead it together. If you add more sugar at this point, using a strainer or sifter helps prevent lumps. knead this until it is smooth and no longer sticky.

Like JoAnnB said, I never add all of the powdered sugar.
If I want my batch to be a little bit bigger I add another TBSP of water and then I add all fo teh sugar.
