I don't know what I'm doing wrong, but this is the third time I've have an icing bubble occur. Whenever I've done a two-layer cake, this bubble appears well after I've finished a cake. Sometimes it's very hard to fix without messing it up. Has anyone ever had this happen and what's the solution?

UGH!

Are you icing with fondant or buttecream? If you're using cornstarch to dust the fondant or rolling surface with this will cause fermentation in the fondant which will make bubbles. Also if you're kneading the fondant with a lot of folding this will cause bubbles to form. The solution withfondant is to avoid doing these things and if a bubble appears to prick it at an angle with a pin, smooth the bump with a smoother and rub a little icing sugar over the pin hole.

I'm using buttercream. After I've decorated the cake is when a bubble appears on the side of the cake.

I don't know how to help you besides regurgitating what I have heard other people say, because this hasn't happened to me. I do bake from scratch though, and it seems that is the mix cakes that have a problem with this. Can you let the cake settle longer before you ice it? Other than that, I have heard that pin pricks around the borders works.

I read from a CCer to be careful when mixing the icing - don't over mix. I have been making a lot of buttercream from scratch and after I read that, I haven't had anymore problems with that. Hope it helps to avoid the problem before the icing is already on the cake.
