Hi. For awhile now, I've been using one doctored recipe:

1 cake mix (and ingredients listed on box)
1 cup each white sugar, sour cream, flour

I've been pretty happy with this recipe, but I would like to experiment with other recipes and see how they turn out. I've been reading through several other doctored extender recipes and I'm wondering if the following will work:

1 cake mix
4 eggs
1/3 cup melted butter
either 1 1/3 cup milk or 1 1/3 cup water with powdered buttermilk
1 cup white sugar
1 cup flour
1 cup sour cream
1/3 tsp salt
1 tablespoon vanilla extract

Do you think the cake will turn out okay if I try this or will I run into some problems? Any suggestions on things I should change to it? Thanks.

I just made a cake similar to this and it turned out really well. There is a Almond Sour Cream Wedding Cake recipe, I think on this site that is like this one and it is very good! I'd use regular milk, especially with the sour cream. I only use buttermilk for chocolate cakes.

WHen you add so much extra to a box mix, how does it affect the baking time? How do you know how much to use? Sounds like it would really extend the recipe a lot.

Thanks, Sarah

I made a strawberry cake and put in strawberry yogurt (instead of sour cream) and just a little strawberry syrup. I know it sounds like a little too much strawberry, but it was really good and everyone raved about it. I'm sure you could use any flavored yogurt. Oh, and I forgot, I replaced the oil with butter and replaced the water with milk, and then the rest of the stuff in the extender.

This is my extender recipe that I got from someone on the wilton site:
1 cake mix with all of the ingredients asked for on the box
Plus: 1 cup flour
3/4 sugar
1 tsp baking powder
1/2 cup softened butter or oil (I use butter and cream it before adding the other ingredients)
2/3 cup water or milk
I also add 1 tsp of vanilla and almond-optional

I start by creaming the butter, then add all of the other ingredients. It makes about 7 cups batter
